This app also has a database of food pH levels so before you buy or eat a certain food you can check the pH level of the food. This will help you become more conscious of what you are putting into your body along with knowing how you are reacting to the foods you eat.

What is pH?
Our body pH is very important because pH controls the speed of our body's biochemical reactions. It does this by controlling the speed of enzyme activity as well as the speed that electricity moves through our body.

The higher (more alkaline) the pH of a substance or solution, the more electrical resistance that substance or solution holds. Therefore, electricity travels slower with higher pH.

All biochemical reactions and electrical (life) energy are under pH control.

If we say something has an acid pH, we are saying it is hot and fast. As an example, look at the battery of your car. It's an acid battery. On cold days you want it to be hot and ready, and you want your car to start fast.

Alkaline pH on the other hand, biochemically speaking, is slow and cool. Compare it to an alkaline battery in a flashlight. You want that battery to be cool, and to burn out slowly.

Here is an example of how pH can control. Look around you at society in general. Do you see people getting exhausted, burned out, and quick to anger? Do you see a rise in violence? In part it could be due to the fact that people today lean to an acid pH. As a society we are running hot and fast. How did we get there? We guzzle coffee for breakfast (acid), burgers for lunch (acid), wash it down with king size colas (acid), and have a pizza (acid) for dinner. In fact, with this scenario, you could easily correlate the rise of violence in our society with the increasing number of fast food restaurants on every corner. But I digress. However, this does lead me to the second part of the pH and digestive metabolic equation. pH is under the direct control of what we put into our mouths. Kind of makes sense doesn't it?

The aim of the project is to test seven ancient grape vaieties, both from a point of view of vineyard management and of winemaking potential. The grape varieties have been recovered from old and abandoned vineyards, including one found in Albet i Noya's estate. At Parawdiso we expect all suppliers of dried fruit to adhere to the strictest standards. Why? Because it's not just about controlled ecological production. GM foods and irradiation treatment are as taboo to us as drying temperatures over 40°-50° C.

Cashew nuts are rich in protein, carbohydrates and minerals. They're extremely low in fat compared to other nuts. What's more, the high amount of unsaturated fatty acids makes these nuts even healthier. As well as calcium and magnesium (both of which are important for bones, nerves and muscles) cashew nuts contain a lot of iron, phosphorus and copper - all -known to give a sudden and noticeable energy boost.

What's behind this energy boost? High B-vitamin concentrations, such as thiamine (B1), niacin (B3) and pantothenic acid (B5), which play a vital role in the metabolism of carbohydrates and proteins. And last but not least, a high concentration of amino acid arginine also plays a role in boosting energy.

Since a layer of a bitter oil lies between the cashew nut and its shell, almost all cashew nuts are briefly flamed. Although not quite roasted, the cashew nuts are no longer raw and alive. At Parawdiso you can now buy guaranteed raw cashew nuts, a true rarity.

Ibiza in winter - time to enjoy the island. Every Sunday it is brunchtime at Parawdiso. Starting at 12 for about 4 hours you will be served with a rich vegetarian cousine. Organic coffee, fresh ginger-lemon tea with marple sirup, nourishing juices, power smoothies, homemade musli with yoghurt, warm soups, salads, sandwiches, zucchini spaghettis - all made with the most fresh ingredience you can imagine (and love). For dessert or in the afternoon for tea-time try the carrot or the chocolate cake - it's just mouthwatering.

The Parawdiso Story started in December 2007. Sarah, Konrad and me just moved from Berlin to Ibiza. We were staying at Can Xic a magic, 350 year old finca in the mountains of Sant Vincente...the home of Aliwalu.

The evenings we spend in the kitchen in front of a fireplace. Bubi, another guest staying at the place - and since 4 years only eating raw-food - is telling us about his experience. I am amazed by a raw-food bread he was producing in an former stable, outside the house. We were visionaring of how we develop a huge business out of it.

Sarah started doing raw-food, Aliwalu as well - and so me. We got inspired by it and started spending more and more time with discovering the endless possibilities of preparing super-good looking and extremely well tasting dishes using mostly the produts of local organic farmers...

On the 6th of January Aliwalu and Sarah invited to a meeting, outside the house, up the hill in front of a tippi, which was built up there. Great views about the wally - and the sea. After a beautiful introduction speech of Aliwalu we discussed future possibilities and we all agreed on to start a business togehter. Aliwalu told us about a nice venue in Santa Gertrudis, which might be the right place for production and sales. Spontanously we jumped in the car - and drove there right away.

When we saw the building the first time we all felt excitited: yes - this is it! Only from seeing it from the outside we were convinced to rent it! It was the a Sunday, the 6th of January - a holy day. Aliwalu went around the house, stayed away for 15 minutes and came back with a bright smile in her face - than she said: we have it!

We started to plan the rawvolution. On one hand side we wanted to set up a big scale production of raw-bread. We had absolutly no doubt that the world is waiting for it. But not only a bread production, also raw-chocolate, pesto and pickles. All this to be market wholesale - but also sold in the venue in Santa Gertrudis.

To do so, the idea was to ad a kind of café/restaurant/store...lets say deli, to promote and celebrate the "raw" lifestyle.

Aliwalu came up with the concept of financing: The four of us, plus friends we considered to be in, each come up with 52.000€. Besides us we counted in my friend Reza and Aliwalus friend Veronica. B.U.B.I. wanted to get his part from one of his friends.

Unfortunatly this didn't worked out. Reza, when he arrived from London, made up his mind and decided not to be part of the start up. Veronica, after she arrived from India, neither joined in.

We allready signed the contract for renting the building, started employing people, and got the whole thing running.

At this time it start getting complicated. The group dynamic struggled.

Facing the reality of not having enough money to set up things how we dreamed about, we had a lot of discussions, how to go on.

Things start falling apart. The innocence of our idealism clashed with business reality. On the way we experienced that at one hand side we were sharing a great vision, but on the other hand side we had different opinions how to get there...

At some point we started dividing the "production" from the "restaurant". B.U.B.I and me where thinking of setting up the production and on the other hand site Sarah, Aliwalu and wanted to do the restaurant together. First all in the same place, than in two different places, than again in the same place.

Time is rushing, months have passed by - and still we didn't know how to proceed. We allready somehow opened, first events were going on, media attention,...but still a lot of things to do. Permission, construction, concept, marketing, equipment, products,...

It got really crazy - and at some point B.U.B.I. decided to go his own way, and also Aliwalu didn't know how she should go on.

It all break up, but for Sarah and me the point of no return was overflown. To much passion - but also to much money we allready invested into this project - and as we just moved to Eivissa we considered this project the base for our future.

So we kept on going.

There is a saying in Ibiza, a life-philosophy: poc a poc (bit for bit) - and that is the way we are going on to build up the place...

Life goes on.
